The Headlines:
In the role of Manager, Microbiology & Yeast Fermentation working in Milwaukee, WI, you will lead a team of Yeast and Fermentation Scientists (YFS) to set strategies, goals and priorities related to the testing and monitoring needed to deliver microbiologically stable beverages produced at Molson Coors North America breweries, craft facilities, and contract partners. Specifically, you will oversee the YFS team with respect to work related to yeast management, propagation, fermentation health, brewing microbiology and quality systems, micro education and troubleshooting. You will provide expertise, recommendations, and direction for microbiological methodologies, techniques, instrumentation, procedures and standards. This includes the development and implementation of Micro Programs, and subsequent auditing of brewery compliance. You will network with external resources to remain in the forefront of technical expertise and emerging applications. This position reports to Sr. Mgr Quality Services and partners with Corporate Quality, Corporate Brewing, R&D, Innovation Teams and Breweries to deliver enterprise objectives.
The Responsibilities:
- Develop and implement strategies related to microbiology and yeast.
- Lead a team of 3 Yeast and Fermentation Scientists.
- Develop and implement new micro methods and test procedures for new and existing products and processes.
- Develop and implement micro monitoring programs and oversees compliance to programs.
- Oversee Molson Coors Global master yeast cultures and culture collection.
- Develop quality systems for yeast management, propagation and fermentation health.
- Establish and manage micro specifications for incoming ingredients and micro stabilization parameters.
- Oversee decision processes for microbiology non-conformance.
- Troubleshoot brewery yeast performance and micro issues.
The Other Qualifications:
- You have a Bachelor of Science degree in microbiology or a science related field and at least 8 years of microbiology experience in the brewing industry.
- In-depth experience with yeast propagation systems in laboratory and production, yeast handling, and yeast storage.
- In-depth knowledge of microbiology principles and techniques with focus on brewing microbiology, molecular biology, yeast physiology and fermentation.
- Comprehensive understanding of microscopy techniques, molecular typing, rapid molecular detection, microbe recovery, and microbial metabolism.
- Experience with of yeast culturing and cryogenic freezing techniques.
- In-depth knowledge of isolation/identification and aseptic techniques.
- Thorough understanding of product analysis and test methodologies to support microbiology, propagation and fermentation projects.
- Experience with measuring and managing microbiological risks for various stages of the brewing process.
- Ability to resolve complex brewery concerns related to micro concerns, yeast management practices and fermentation performance.
- Knowledge of microbiological criteria for raw materials and non-alcoholic beverages.
- Experience with defining various mechanisms to use to ensure beverage product stability, including but not limited to preservatives, chemical stabilization, and mechanical stabilization.
